About this experience
This is a tour about patience: brisket that spent fourteen hours in the smoker, and oysters that spent three years in cold Pacific water. We visit two pitmasters and two raw bars, tasting how fire and ocean shape completely opposite kinds of flavor. You’ll learn to read a smoke ring like a pitmaster, shuck your own oyster without losing a thumb, and settle the eternal debate: mignonette or nothing at all. Between stops we talk sourcing — who catches what, who smokes what, and why it matters. Includes all tastings, one drink pairing, and a take-home jar of my house rub. Not suitable for shellfish allergies.
